Ahi Tuna Steak
Grill tuna steaks to desired temperature or pan sear in sesame oil. In a medium bowl combine all ingredients except for the butter and cream. In a medium sauce pan bring mixture to a gentle boil. Whisk in cream and butter until melted. Serve on top of tuna or as a dipping sauce on the side.

- (4) 8 oz. tuna steaks
- 1 cup sherry
- 1 cup soy sauce
- 2 scallions, chopped
- 2 teaspoons fresh ginger, grated
- ½ teaspoon coarse black pepper
- 1 tablespoon sugar
- 1 tablespoon butter
- 1 tablespoon cream
