In a small bowl, whisk together honey, lemon juice, lemon zest and sesame seeds. In a medium non-stick sauté pan, heat oil over moderately high heat until hot, but not smoking. Add salmon and cook for 2 to 3 minutes on each side, or until medium or golden brown. Transfer salmon to 4 plates. Add honey mixture to sauté pan and simmer, stirring occasionally, until it reaches a glaze-like consistency. Pour the glaze over salmon and serve.
Alternatives:
You may also finish the salmon in the oven. Just place the cooked salmon in an oven proof dish, pour uncooked honey mixture over the salmon and broil on high until the honey bubbles and glazes nicely (2-3 minutes). Just watch it closely so it does not burn.
Try grilling the salmon. Just brush the salmon on both sides with the oil and grill to your desired temperature. Then finish with the honey mixture…either way is fine cooking the honey in the sauté pan or broiling the uncooked honey mixture i n the oven.
For an Asian twist:
Reduce the honey to ¼ cup and replace the lemon juice with ¼ cup soy sauce. Replace the lemon zest with 1 clove of minced garlic. Follow the same cooking directions. Garnish with the black sesame seeds.

½ cup honey
3 Tbsp lemon juice or juice of ½ of freshly squeezed lemon
Zest of 1 lemon, minced
